Current educational programs, in any field, must be shaken and rethought in favor of a new world that is revolutionized to improve and evolve.
From our essence as kitchen professionals we consider:
«What training would we have liked to experience?» and“what content should we address to improve a business model anchored in past visions that do not respond to the current needs of chefs and consumers?”
Initial challenge
Our challenge is to design and execute a 4-week program of 200 hours, with a daily dedication of approximately 7 hours by the students, with disruptive and updated content.
Route
In collaboration with the company Nydum, a yoga teacher training center with monthly immersive programs with students from all over the world, we launch the program, in its facilities, which runs from June 1 to 26, 2023 with a small group from students.
The program features:
- Weekly work-themed program (week 1: The healthy chef, week 2: The power of feeding people, week 3: Knowing the food ecosystem, week 4: Cooking for the planet)
- Daily cooking practices with real clients (breakfasts, lunches and dinners for a daily group during the 4 weeks, with 15 guests per meal)
- Gastronomic knowledge activities of the territory.
- Masterclass with external collaborating teachers, weekly.
- Final individual design project of a 1-week gastronomic proposal for a yoga retreat, with actual execution of 2 days
- Final group work project: design and execution of a zero waste brunch.
Conclusions
The success of this program is the format itself, since its intensity not only allows us to create high-value educational content, but, intrinsically, continuous spaces for reflection and conversations are generated, which indirectly impacts everything that we have presented. established. And this is where we find an opportunity for change.
