Specialization Course in Culinary Techniques and Uses of Fermentation.

Design and execution of specialized training in fermentation for the University of Girona Foundation.

In the current educational landscape, there are few options in such specialized subjects as fermentation, zero waste, food recovery, and even less democratize all this knowledge to make it accessible.

On this occasion we received an order from the University of Gerona Foundation in the form of a Specialization Course to teach the bases of fermentation and the types of fermented foods.

Initial challenge

Design and execute a 10-week online program with specific content, practices and final coursework.

    Route

    What we have achieved in the design and subsequent execution phase of this course has been:

    • Deatomize information on fermentation.
    • Design a battery of weekly practices with a tour of fermentation techniques.
    • Create motivation in the execution of a final project with a personalized challenge for each student.
    • Promote the Indaga Network, incorporating, as teaching staff, more than 12 expert professionals with their own projects or working in leading companies in the sector.
    • Generate technical documentation in the form of visual dossiers with extra content.
    • Design training with interaction elements, idea generation dynamics and the consolidation of concepts in an attractive and enjoyable way.

    Conclusions

    The generation of a training program goes beyond the individuals, collaborators and participants themselves. It is in these services where we find a way to strengthen sustainability and social intervention, which must promote scenarios of regeneration and positive impact on our environment.
