A mantra we have adopted, with permission from Douglas McMaster (SILO London) is:

“Waste is a lack of creativity”

And we, who do not lack creativity, and less desire, are filled with emotion to create this type of edutaintment, education and entertainment events.

Initial challenge

Design and execute an “almost” zero waste menu in catering format for about 30 people, with creative zero waste gastronomic proposals and with supporting information to be able to “educate” diners.

Route

We design a waste map with which we analyze all the proposed preparations, describing the ingredients and waste generated in their preparation. Each of these waste must have a creative outlet that is reincorporated into the menu.
An example that describes this philosophy is a tomato tartar, whose skins are identified as potential organic remains. These skins are dehydrated and converted into a tomato salt powder that is used for other preparation on the menu.

Highlights of the process:

  • Preparation of waste map.
  • Preparation and execution of the zero waste menu.
  • Generation of posters to explain the sustainability inputs of each recipe.
  • Calculation of the waste generated in the preparation of the menu (2kg) and comparison with the same menu without taking into account the zero waste philosophy or zero waste (8kg).
  • We created a sheet to share with diners the creative process of menu design.

 

Conclusions

Promote entertainment with a desire to share and disseminate knowledge, to transmit easy and immediately applicable solutions that we can consider in our daily lives, rethink ourselves so that we continue doing what we have always been doing and that has a capacity for potential improvement, and Above all this, continue enjoying the pleasure of eating and sharing tables.
